When I visited Donna Hay‘s General Store while I was Sydney last year I picked up a few recipe cards that they have scattered around the store. One was for a Caramelised Onion Tart which I thought would be perfect as quick meal or a starter when we entertain.
The Husband is a huge anchovy fanatic and me, olives so I knew it would be a hit!
Caramelised Onion Tart
1 sheet (25cm x 25cm) store-bought puff pastry, thawed
¾ cup Donna Hay caramelised onion relish
8 pitted olives
8 anchovy fillets, optional
2 teaspoons thyme sprigs
Cracked black pepper
Preheat oven to 180°C. Trim edges of pastry and halve.
Place on a sheet of non-stick baking paper on a baking tray.
Divided the caramelised onion relish between the pastry and top with olives, anchovy and thyme.
Bake for 20 – 25 minutes or until pastry is puffed and golden.
Sprinkle with pepper and serve with a salad.
