On Sunday morning I woke with the urge to have pancakes but not just any pancakes. I managed to get my hands on a recipe for Coconut Pancakes and seeing I absolutely love coconut, they were exactly what I needed.
1/2 Cup of Almond Meal
1/3 Cup of Coconut Flakes
2 Tablespoons of Coconut Cream
1 Tablespoon of Coconut Oil (for frying)
1 Tablespoon of Honey or Maple Syrup to Serve
Beat egg white until stiff. Gradually add egg yolks, almond meal and coconut cream to the egg whites.
Pour mixture in to a pan and fry in coconut oil. Turn the pancakes on each side until golden brown.
Serve with a dollop of coconut cream, honey/maple syrup, and sprinkle with coconut flakes.

*Note: we did find them a little “eggy” but still extremely light as I used quite large eggs but next time I might add 1/3 Cup of Flour to see if that might make a difference. Any ideas for this would be fantastic!
